What does archiving a project do in relationship to metric data? We want to keep model metric information in the system but remove the projects from the all projects page as there is no more need to run tasks. How does this work?

I don't think Project Archiving will do what you want.
Project Archiving is used to take all data offline for a project. It makes a zip file for the data, and then the zip file can be restored later, either on the same server or a different server (some customers use it for migration of projects between hosts).
That said - it covers a wide variety of information and files - but it does not currently cover the metrics section (that's an oversight we should fix). After the project is archived, it can be deleted from the Clarity host server.
But in terms of what you're referring to, when you delete the project, the metrics will disappear today.
What it sounds like you're interested in is some kind of "take a project offline" feature that would make the project available in some places, but not others?
